Ingredients

  • 2 T butter
  • 1 sm. onion, minced
  • 1 stalk celery, minced
  • 3-4 potatoes, diced
  • 1/2 pound loose pork sausage, formed into sm. balls, 1 inch diameter
  • 2 teaspoon salt
  • 1 1/2 c. water
  • 1 egg
  • 3 c. lowfat milk

Directions

  1. Saute onion and celery in butter. Add in potatoes, sausage balls, salt, and water. Cook till potatoes are tender.Break egg into potato mix and stir with fork till cooked. Add in lowfat milk and heat thoroughly. Makes 4 servings.
