Ingredients
- 1 ½ lbs. pork – cubed
- 1 onion – sliced
- 3 cloves of garlic – chopped
- ½ tsp. salt
- Dashes of black pepper
- ½ cup grape tomatoes – processed
- Dashes of dried oregano
- Dashes of dried thyme
- Dashes of dried rosemary
- Dashes of paprika
- ¼ cup chicken broth
- ¼ cup wine
- 1 tablespoon butter
- Olive oil for drizzling
- Sour Cream Dill Dressing - for the Salad or Flat Bread:
- 1 cup sour cream
- Handful of fresh Dill
- 2 celery stalks
- 1 tsp. of capers – plus a little caper juice
- Juice of ¼ lemon

Pork Souvlakia
Time: 15 minutes prep, 1 hours cook
Servings: 4
Directions
- Combine all of the seasonings in a small bowl.
- Place the cubed meat in a container and pour the seasoning over the meat. Work the seasonings into the meat; cover and refrigerate for at least one hour.
- Heat a large frying pan with a drizzle of olive oil and the tablespoon of butter.
- Sauté the pork in the hot frying pan until it is golden on all sides â about 10 minutes.
- Remove from the pan and set aside.
- Add the onion and the garlic; sauté until the onion is slightly golden. Place the pork back in the pan with the onion and garlic. Add the chicken broth, wine and the tomatoes.
- Simmer for about 40-45 minutes until the meat is tender.
- Sour Cream Dill Dressing - for the Salad or Flat Bread:
- Combine all of the above ingredients in a food processor and process until smooth.
- Plate on either a flat bread or lettuce leaves and spoon the sour cream sauce over the leaves.
