Ingredients

  • 1 bunch string beans (cut about 2 inches each)
  • 8 pcs okra (cut in half)
  • 1 large eggplant (sliced)
  • 1 medium ampalaya (seeded and sliced)
  • 1/4 kilo squash (chopped in cubes)
  • 2 ripe tomatoes (diced)
  • 1 onion (diced)
  • 3 cloves garlic (diced)
  • 4 tsp bagoong (shrimp paste)
  • 2 tbsp cooking oil
  • 1 cup meat broth

Pinakbet

Time: 15 minutes prep, 20 minutes cook
 
 

Directions

  1. Heat oil in pan.
  2. Saute onions, garlic and tomatoes.
  3. Add the shrimp paste, stir for a few minutes. then add the meat broth and bring into a boil.
  4. Add the kalabasa and okra, cook for 2 minutes.
  5. Add the string beans and ampalaya. Cover and simmer for 3 minutes.
  6. Season if needed.
  7. Add the Eggplant and cover, cook for another 3-5 minutes, or until the vegetables are tender to your liking.
  8. Serve in plate.
  9. Optional toppings with your favorite meat: fried pork, shrimp, or chicken.
