Ingredients

  • 1 pound penne pasta
  • 1 pound chicken breast, cut into 1/2" strips, 2" long
  • 1/4 pound shitake mushrooms, minced
  • 3 c. heavy cream
  • 4 c. tomato sauce
  • 3 shallots, cleaned & diced
  • 1/8 c. extra virgin olive oil
  • Salt to taste
  • Pepper to taste
  • Flour to cover

Directions

  1. Cook pasta as directed.
  2. Sauce: Place 1/8 c. oil in fry pan. Flour chicken pcs. Saute/fry chicken in oil till browned. Add in shallots, cook 2 min more. Add in tomato sauce; cook 3 min more. Add in cream; let boil. Put pasta in sauce. Garnish with fresh basil.
