Pasta With Broccoli And Spinach

Ingredients

  • 200 gm Penne
  • 1/4 c. White wine
  • 15 gm Butter
  • 3 x Spinach leaves
  • 1/2 x Onion
  • 1/4 c. Grated parmesan cheese
  • 1/4 tsp Grnd nutmeg
  • 1/4 c. Grated cheddar cheese
  • 125 gm Broccoli florets

Pasta With Broccoli And Spinach

Directions

  1. Preparation: chop the onion and shred the spinach leaves.
  2. Alternative to wine: white grape juice works just as well.
  3. 1. Cook the pasta in a large quantity of boiling water till just tender.
  4. Drain and place in a greased, shallow, ovenproof dish and keep hot.
  5. 2. Heat the butter in a large pan. Add in the onion and cook over a low heat for 3-4 min.
  6. 3. Add in the nutmeg, broccoli and spinach. Pour over the wine or possibly grape juice.
  7. 4. Cover and cook over a low heat for 5 min.
  8. 5. Spoon the vegetable mix over the pasta. Top with the cheeses and bake at 180C for 5 min, or possibly till the cheese has melted and browned.
  9. Serve immediately.
