Parmesan Fish Fillets

Ingredients

  • 2 tbsp flour
  • salt
  • freshly ground black peper
  • 170 g white fish fillets, skin removed
  • 1 egg, beaten
  • 55g freshly grated Parmesan cheese
  • olive oil
  • 1/2 a fresh red chilli, desseded and finily chopped

Parmesan Fish Fillets

Time: 5 minutes prep, 5 minutes cook
 
 

Directions

  1. Get a frying pan really hot.
  2. Season the flour with salt and pepper
  3. Dust the fish fillets with the seasoned flour.
  4. Then dip into the egg and press into the grated Parmesan, making sure the fish is nicely covered.
  5. Add a little olive oil to the hot pan, and fry the fish fillets for a couple of minutes on each side until golden brown.
  6. Thow in the chilli.
  7. Serve with a salad.

    Made this tonight for a dinner party - it was good but I used a little too much parmesan I think - overpowered the taste of the fish. Would make again with less cheese. Thanks so much for sharing!

      T'was good, though would agree a bit heavy on the Parmesan (though I may have eaten too much other cheeses before the fish). Perhaps a 50:50 mix of parmesan and bread crumbs. I really liked the spice from the chilli's and a squeeze of lemon would have been good.

        This was really good. I was thinking that a heartier, thicker fish might work better with the amount of parmesan. Maybe halibut? I really enjoyed the flavor.
