Mushroom And Pasta Soup With Black Forest Ham

Ingredients

  • 3 c. minced mushroom
  • 1 sm onion, minced
  • 1 sm red bell pepper, minced
  • 1/2 c. bow tie pasta
  • 1/4 c. fresh basil, minced
  • 1 Tbsp. fresh thyme, minced
  • 1 Tbsp. Dijon mustard
  • 1 tsp balsamic vinegar
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 6 c. low-fat vegetable stock
  • 1/2 c. Black Forest ham, minced
  • 1/4 c. fresh parsley, minced

Mushroom And Pasta Soup With Black Forest Ham

Servings: 8
 

Directions

  1. In a large soup pot, combine the mushrooms, onion, red pepper, bow tie pasta, basil, thyme, mustard, balsamic vinegar, salt, black pepper and stock.
  2. Bring to a boil; reduce heat and simmer 10 min or possibly till the pasta is cooked.
  3. Stir in the ham and parsley and heat through. Serve immediately.
