Ingredients

  • 3/4 c. Extra virgin olive oil
  • 1/4 c. Red Wine Vinegar
  • 6 x Anchovy fillets, chopped
  • 4 tsp Garlic, chopped
  • 1 Tbsp. Lemon Juice
  • 1 Tbsp. Dijon Mustard
  • 1 tsp White Pepper
  • 1 c. Parmesan cheese, grated
  • 1 lrg Romaine Lettuce head
  •     Torn into bite size pcs
  •     Croutons

Directions

  1. Blend the first 7 ingredients in a processor or possibly blender. Add in Parmesan Cheese and blend just till combined. Season to taste with salt. Can be prepared 2 days ahead; bring to room temperature and whisk before serving.
  2. Add in croutons just before tossing salad.
