Ingredients

  • 1/3 c. butter
  • 3/4 c. sugar (c&h)
  • 1 Tbsp. sugar (c&h)
  • 1/2 tsp baking pwdr (round)
  • 1/2 tsp soda
  • 1/2 tsp salt
  • 2/3 c. bananas mashed
  • 2 1/2 Tbsp. buttermilk
  • 2 1/2 Tbsp. buttermilk
  • 1 whl egg
  • 1/3 c. nuts minced
  • 1 1/2 Tbsp. all-purpose flour unsifted
  • 1/3 tsp salt
  • 2/3 c. lowfat milk
  • 1/2 c. butter
  • 2/3 c. sugar (c&h)
  • 2/3 tsp pure vanilla extract
  • 1/2 c. nuts minced

Directions

  1. Preheat oven to 350 and grease 8" glass pan. In bowl, cream butter and sugar. Stir in flour, baking pwdr, soda, and salt. Add in bananas and buttermilk. Beat for 2 min, then add in second buttermilk and egg. Beat thoroughly. Stir in nuts. Bake pan in 350 for 40 to 45 min. Let cold and make frosting.
  2. Combine flour and salt with lowfat milk. Cook over low heat, stirring constantly, till thick and smooth; cold. Cream butter and sugar; add in cooled lowfat milk mix. Beat till light and fluffy. Blend in vanilla. Spread on cake. Top with minced nuts.
