Ingredients

  • 7 ounce (200 g) dark chocolate (minutes. 70% cocoa)
  • 8 ounce (250 g) finely granulated (caster) sugar
  • 3 level tbsp icing sugar
  • 1 tbsp sifted flour
  • 7 ounce (200 g) sweet butter
  • 5 Large eggs
  • 3.5 ounce (100 g) blackberries
  • 3.5 ounce (100 g) strawberries
  • 3 ounce (75 g) blueberries
  • 3 ounce (75 g) raspberries
  • 6 individual pans (for rum cake)

Directions

  1. Wash berries, then stem strawberries and cut into pcs
  2. Place all fruit in a large bowl and add in icing sugar Mix well and chill Heat butter and chocolate in a small saucepan over very low heat Stir continuously
  3. Separate egg yolks from whites into two bowls
  4. Preheat oven to 350°F (180°C)
  5. Beat egg yolks with caster sugar and flour till white A little at a time, beat in melted butter and chocolate
  6. Beat mix till homogenous
  7. Beat egg whites till they form peaks and fold into chocolate mix
  8. Lightly butter pans and add in batter
  9. Bake in warm oven for 18 – 20 min
  10. Wait 15 min before unmolding cakes once they’re baked
  11. Place on dessert plates and garnish with berries
