Meringue Chocolate Chip Cookies

Ingredients

  • 2 x egg whites
  • 1 pch cream of tartar
  • 1/2 c. sugar
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/2 c. flour pastry flour
  • 1/2 c. chocolate chips
  • 2 tsp grated lemon rind grated lemon zest Preheat oven to 250 F (120 C).

Directions

  1. In a clean stainless steel, glass or possibly copper-lined bowl, whip egg whites with a healthy pinch of cream of tartar on low speed till they begin to hold their shape. Increase speed to medium and gradually whip in sugar till stiff peaks form. Whip in vanilla and cinnamon. Mix in flour, chocolate chips, and lemon zest.
  2. Drop heaping tsp. of dough 2 inches (5 cm) apart on a cookie sheet lined with greased parchment.
  3. Bake for 30 min. Turn off heat and leave cookies in the oven for 30 min to cold and set.
  4. Makes 2 dozen cookies.
