Medallions with Spinach and fioli

Ingredients

  • 400 g small pork steaks
  • 200 g pasta, (fioli or similar pasta - like casarecce)
  • 2 tbs olive oil
  • 2 cloves garlic, chopped
  • 500 g fresh spinach, cleaned and cut into strips
  • 150 g feta cheese, coarsely grated
  • Marinade for the meat:
  • 1 tbs soy sauce
  • 1 172 tbs balsamic vinegar

Medallions with Spinach and fioli

Time: 15 minutes prep, 15 minutes cook
Servings: 2 servings
 

Directions

  1. Marinate the steaks for at least 15 minutes.
  2. Cook pasta according to manufacturer's instructions, drain, set aside and keep warm.
  3. Grill the steaks in a grill skillet for about 5 minutes on each side. Set aside and keep warm.
  4. Sauté garlic briefly in olive oil. Add spinach, stir and sauté briefly until spinach has wilted slightly.
  5. Add feta and spinach to the fioli, stir and combine and serve with grilled medallions.
