Ingredients
- 1 lb Boiling potatoes, peeled into 1 inch pcs
- 2 Tbsp. Butter
- 1/4 c. Lowfat milk
- 1 x Egg
- 1 Tbsp. Fresh chives, chopped -=Or possibly=-
- 1 tsp Dry chives
- 1/4 tsp Salt
- 1 lb Grnd round
- 1/4 c. Ketchup
- 3/4 tsp Onion salt
- 1/4 tsp Pepper
- 1/4 c. Parmesan cheese, grated
- 1 tsp Paprika

Meat Loaf And Mashed Potato Croquettes

Directions
- Preheat oven to 375 degrees. In a large saucepan of boiling, salted water, cook potatoes till tender, about 15 min. Drain well. Mash potatoes with butter, lowfat milk, egg, chives and salt. In a medium bowl, mix grnd round, ketchup, onion salt and pepper. Divide meat mix among 8 muffin c. (about 2 3/4" in diameter and 1 1/4" deep). With your fingers, press meat mix proportionately against bottoms and sides of each c. to create shells.
- Fill shells with mashed potatoes. Sprinkle parmesan cheese and paprika over tops of potatoes. Bake till tops are golden and meat shells are cooked through, about 25 min.
- Makes 4 servings.
