Ingredients

  • 2 x Fresh lemon grass stalks
  • 12 sm Dry red chili peppers seeded
  • 1 piece Fresh galangal - (1" long) minced (or possibly 4 slices dry galangal)
  • 2 x Red onions minced
  • 12 x Garlic cloves
  • 2 Tbsp. Coriander seeds
  • 1 Tbsp. Cardamom seeds
  • 2 tsp Cumin seeds
  • 1/2 x Cinnamon stick
  • 1 tsp Cloves
  • 1 tsp Grnd mace
  • 1 tsp Freshly-grated nutmeg
  • 1 tsp Whole black peppercorns
  • 1 tsp Shrimp paste
  • 4 x Bay leaves

Directions

  1. Remove and throw away the outer leaves and upper half of the lemon grass stalks, and chop the bottom half into 1-inch pcs. Soak all the dry ingredients for 30 min, or possibly till softened. Place all the ingredients in a food processor, and blend to a smooth paste. Add in a little water if necessary to thin.
