Ingredients
- 1 3/4 c. Coarsely minced tomato
- 1 c. Small cauliflower flowerets
- 1 c. Thinly sliced celery
- 1 c. Finely minced fresh parsley
- 3 Tbsp. White vinegar
- 1 Tbsp. Vegetable oil
- 1/4 tsp Salt
- 1/4 tsp Sugar
- 1/8 tsp Pepper
- 4 c. Tightly packed torn iceberg lettuce

Marinated Tomato Cauliflower Salad

Directions
- Combine first 4 ingredients in a large, shallow nonmetal bowl. Combine vinegar and next 4 ingredients; pour over vegetables. Cover and marinate in refrigerator 2 hrs. Combine tomato mix and lettuce in a bowl; toss.
- Yield: 8 servings (serving size: 1 c.).
