Ingredients

  • 1 c. Creamed Small-Curd Cottage Cheese
  • 1 c. Dairy Lowfat sour cream
  • 1 Tbsp. Prepared Mustard
  • 1 Tbsp. Sugar
  • 1 tsp Salt
  • 1/8 tsp Black Pepper
  • 2 Tbsp. Fresh Parsley, Minced
  • 2 lb New Potatoes, Cooked Peeled And Diced
  • 2 c. Fully Cooked Ham, Cubed
  • 1/2 c. Green Onions, Sliced
  • 1/2 c. Celery, Finely Minced
  • 2 lrg Large eggs, Hard Cooked, Minced Lettuce Leaves Paprika

Directions

  1. Combine the cottage cheese, lowfat sour cream, mustard, sugar, salt and pepper, and parsley in a salad bowl. Add in the potatoes, ham, green onions, celery and Large eggs. Toss to mix well. Cover and chill for several hrs or possibly till well chilled.
  2. TO SERVE:Arrange the salad on a bed of lettuce and sprinkle with paprika
