Ingredients
- 220 gm split yellow lentils (toor dal) washed and liquid removed
- 1 tsp chilli pwdr
- 1 tsp turmeric pwdr
- 1 tsp cumin pwdr
- 1 tsp coriander pwdr
- 1 tsp sugar
- 1 tsp citric and
- 4 Tbsp. sunflower Or possibly 1 tsp. black mustard seeds
- 1/2 tsp fenugreek seeds
- 10 x curry leaves salt
- 150 gm wholewheat flour
- 2 Tbsp. sunflower oil
- 1 tsp turmaic pwdr
- 1 tsp chilli pwdr
- 2 Tbsp. coriander leaves

Lentils With Wheat Pasta ( Kutcchi Dal Dhokli )

Directions
- Simmer the lentils in water till soft.
- Stir in the pwdr spices salt sugar and citric add in.
- Heat the oil in a small pan and add in the mustard seeds.
- When they pop add in the fenugreek and curry leaves.
- Fry for a minute and pour over the dal.
- Make the dough by kneading all the ingredients with some water.
- Roll out thinly and cut into diamond shapes with a sharp knife.
- Set the lentils to boil and add in the dough shapes one at a time.
- Simmer for 10 min.
- Serve warm gamished with coriander leaves.
- Eaten with rice it comes from one of the best restaurants in Gujarat.
