Lemon Mint Marinade For Chicken Breasts

Ingredients

  • 1/4 c. Dry white wine (non alcoholic works too)
  • 1/3 c. Fresh lemon juice
  • 2 Tbsp. Grated lemon zest
  • 1/2 c. Extra virgin olive oil
  • 1/4 c. Minced fresh mint
  • 3 Tbsp. Minced shallots
  • 1 Tbsp. Fresh rosemary
  • 1 tsp Dry oregano Kosher salt and fresh grnd pepper to taste

Directions

  1. Combine the wine, lemon juice, and zest in a non reactive bowl. Whisk in the extra virgin olive oil a little bit at a time. Add in the mint, shallots, rosemary, oregano, and salt and pepper. This makes about 2 c. of marinade.
  2. Marinate chicken breasts for 2-4 hrs. For lamb kebobs, marinate 4-6 hrs. submitted by [email protected] (JoAnn)
