Ingredients
- 3/4 c. fresh key lime juice
- 2 1/2 c. soy lowfat milk
- 1 c. sweetener of choice
- 5 Tbsp. cornstarch
- 2 tsp lime zest

Key Lime Pie Filling

Directions
- Whip all ingredients together till smooth. Pour into saucepan and heat over moderate heat, stirring constantly till thick and creamy.
- Pour into a baked 9"pie crust or possibly serving dishes, and refrigeratetill hard. Top as desired (non-fat cold whip; yogurt with vanilla and sweetener to taste; etc.)
- NOTES : or possibly use as pudding or possibly in making parfaits
