Ingredients

  • 3 x Egg Beaters 99% Egg Substitute, Or possibly Equiv
  • 2 c. Sugar
  • 1/2 c. Applesauce
  • 3 tsp Vanilla Extract, Alcohol Free
  • 3 c. All-purpose flour
  • 1/4 tsp Double-acting baking pwdr
  • 1 tsp Baking soda
  • 3 tsp Cinnamon
  • 2 c. Zucchini, coarsely shredded
  • 1 c. Seedless raisins

Directions

  1. Peel, remove seeds and shred zucchini. Sift dry ingredients together - set aside. Beat Large eggs till foamy. Gradually add in sugar, applesauce, vanilla and zucchini - beat till smooth. Add in dry mix. Stir in raisins. Place batter in two Pammed and floured loaf pans (8-1/2" x 4-1/4"). Bake at 350 degrees for one hour.
