Joan Cook's Tuna Fruit And Pasta Salad

Ingredients

  • 1 can (6-3/4 ounce.) tuna with canola Oil
  • 2 c. Cooked shell pasta
  • 2 c. Fresh fruit and/or possibly sweet -- Peppers, cut into bi Pcs (Jean used -- melon, Grapes, jicam Bell peppers)
  • 1 Tbsp. Sweet onion -- minced
  • 1 x (6 ounce.) vanilla yogurt
  • 1/2 tsp Curry pwdr
  • 1 Tbsp. Lime juice
  • 1 Tbsp. Ginger root -- peeled and Poppy seeds for garnish

Directions

  1. Drain tuna and separate into bite-size pcs. Mix fruit, pasta, onion and tuna. Mix dressing ingredients well. Gently mix dressing with fruit, pasta and tuna. Sprinkle with poppy seeds, if you like. Serve chilled.
