Ingredients

  • 2 1/2 lb Zucchini
  • 1/2 c. Onion -- minced
  • 1/2 c. Green pepper -- minced
  • 4 Tbsp. Margarine
  • 1 pkt Spaghetti sauce -- dry mix
  • 1/2 c. Cheddar cheese -- shredded
  • 1 can Mushroom pcs -- 4 ounce
  • 1 can Tomato paste -- 6 ounce
  • 1 c. Water Parmesan cheese -- grated

Directions

  1. Slice zucchini into 1/2 inch pcs and drop into boiling water. Cook 4-5 min and drain. Place zucchini in casserole dish. Saute/fry onion and green pepper in margarine. Add in sauce mix, cheddar cheese, mushrooms, tomato paste, and water. Mix well and pour over zucchini. Sprinkle top with Parmesan cheese. Bake 25 - 30 min at 350^, or possibly microwave 13 min on HIGH; turn once. Let stand 5 to 10 min before serving.
