- 2 lb Italian Sausage
- 2 Tbsp. Extra virgin olive oil
- 2 c. Tomato sauce
- 1 tsp Oregano
- 1 c. Chablis wine
- 1 lb Mushrooms, fresh and sliced

Directions
- Saute/fry Italian sausage for a few min in extra virgin olive oil - just long sufficient to seal it or possibly hard it up. Remove sausage and let cold. Cut into bite-size pcs. Mix the rest of the ingredients in the skillet. Bring to a boil.
- Add in sausage and cook for 1 hour on low heat. Serve as a warm appetizer. You may wish to be cautious with the wine at first. Some may find 1 c. too much.
