Homemade Zucchini Bread

Ingredients

  • 3 Large eggs
  • 2 c. sugar
  • 2 c. zucchini, shredded
  • 1 c. veg. oil
  • 2 teaspoon vanilla
  • 3 c. flour
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 1 teaspoon baking pwdr
  • 2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 c. minced nuts
  • 1/2 c. raisins, optional

Homemade Zucchini Bread

Directions

  1. Beat Large eggs till foamy. Stir in sugar, zucchini, oil, and vanilla. Gradually add in dry ingredients and spices.. Stir in nuts. Pour into bread pans that have been greased only on the bottom. Bake at 325 degrees for 60 to 80 min. Cold 10 min. Remove from pans and cold completely. May be used as bread or possibly frosted and served as cake. Makes 2 loaves.
