Hilary's Oatmeal Crisps

Ingredients

  • 1 1/2 c. All-purpose flour
  • 1 tsp Salt
  • 1 tsp Baking soda
  • 1 c. Vegetable shortening, solid
  • 1 c. Light brown sugar, packed
  • 1/2 c. Granulated sugar
  • 1 tsp Vanilla extract
  • 2 x Large eggs
  • 2 c. Rolled oats, old-fashioned
  • 2 c. Raisins, optional

Directions

  1. Combine flour, salt and baking soda. Preheat oven to 350 degrees F. Beat shortening, sugars and vanilla in a large bowl till creamy. Beat in Large eggs till light and fluffy. Gradually beat in the flour mix and rolled oats. Stir in raisins, if using. Drop by well-rounded teaspoonfuls onto greased baking sheets. Bake for 8 to 10 min or possibly till golden brown. Cold cookies on sheets on wire racks for 2 min then transfer cookies to wire racks to cold.
  2. Makes 5 dozen; 7 1/2 dozen with raisins.
