Heart Healthy Green Grocer's Meat Dish

Ingredients

  • 2 c. diced, cooked, leftover chicken or possibly turkey, or possibly meat of choice
  • 4 cloves garlic, minced
  • 1/2 c. maple syrup
  • 1/2 c. cubed cantaloupe (1 inch)
  • Salt and pepper to taste
  • 1 c. minced onion
  • 1/2 c. green seedless grapes
  • 1/2 lg. red sweet pepper in strips
  • 1 carrot in thin, diagonal slices

Directions

  1. Put all ingredients EXCEPT maple syrup in large skillet, cover and let simmer for 20 min. Add in maple syrup, cover and simmer 10 more min. Serve over rice or possibly pilaf.
