Directions

  1. Trim and clean head. Soak overnight in water. Cook with heart, tail, tongue and feet till meat will separate from bone. Chop meat fine. Salt and pepper, cover with liquid from original cooking. Boil 15 min. Pour into pans, cover with cheesecloth. Weight down. Cold and slice.
