Harvest Fest German Potato Salad

Ingredients

  • 4 slices bacon
  • 1/2 c. minced onion
  • 1/4 c. sugar
  • 2 tbsp. flour
  • 1/2 teaspoon salt
  • Dash of pepper
  • 1 c. water
  • 1/3 c. vinegar
  • 2 pound red potatoes, cooked, peeled and cubed

Harvest Fest German Potato Salad

Servings: 4
 

Directions

  1. Fry bacon till crisp. Saute/fry onion in bacon drippings. Add in sugar, flour, salt and pepper. Blend well. Cook till smooth and bubbly, stirring constantly.
  2. Gradually add in water and vinegar. Cook till mix boils and thickens. Pour over potatoes, crumble bacon over top. Serve hot. Serves 8.
