Harvest Fest German Potato Salad Recipe
Servings: 4
Ingredients
- 4 slices bacon
- 1/2 c. minced onion
- 1/4 c. sugar
- 2 tbsp. flour
- 1/2 teaspoon salt
- Dash of pepper
- 1 c. water
- 1/3 c. vinegar
- 2 pound red potatoes, cooked, peeled and cubed
Directions
- Fry bacon till crisp. Saute/fry onion in bacon drippings. Add in sugar, flour, salt and pepper. Blend well. Cook till smooth and bubbly, stirring constantly.
- Gradually add in water and vinegar. Cook till mix boils and thickens. Pour over potatoes, crumble bacon over top. Serve hot. Serves 8.
