Ingredients

  • 1/4 c. extra-virgin extra virgin olive oil
  • 1 tsp coarsely-cracked black pepper
  • 1 Tbsp. minced rosemary
  • 1 Tbsp. finely-minced garlic
  • 1 x porterhouse steak - (abt 3 lbs) Kosher salt to taste White Bean Salad With Shiitake Mushrooms (see recipe)

Directions

  1. Combine all the ingredients in a medium baking dish. Add in the steak and toss to coat. Cover and let marinate in the refrigerator for at least 24 hrs or possibly up to 2 days. Bring steak to room temperature before grilling.
  2. Preheat grill. Remove steak from marinade and wipe off any excess and season with salt to taste. Sear the steak for 3 to 4 min per side. Close the grill and continue cooking for 10 to 15 min for medium-rare. Let rest for 10 min. Cut into 1/2-inch thick slices.
