Grilled Lemon And Rosemary Chicken

Ingredients

  • 4 lrg boneless skinless chicken breast halves
  • 3/4 c. bottled Italian-style dressing
  • 1 1/2 Tbsp. minced fresh rosemary
  • 1 x lemon cut crosswise into 1/8"-thick rounds

Grilled Lemon And Rosemary Chicken

Directions

  1. Prepare barbecue (medium-high heat). Place chicken between sheets of plastic wrap and lb. on work surface to thickness of 1/4 to 1/2 inch. Place chicken in glass baking dish. Pour 1/2 c. dressing over chicken. Sprinkle with rosemary; turn to coat. Let marinate at least 10 min and up to 2 hrs.
  2. Remove chicken from marinade and place on grill rack. Dip lemon rounds into remaining 1/4 c. dressing and place on edge of rack. Grill chicken till cooked through and grill lemon till slightly charred, turning occasionally, about 5 min total. Transfer chicken to plates. Top with lemon rounds and serve.
  3. This recipe yields 4 servings.
  4. Comments: Offer grilled zucchini slices and a deli pasta salad alongside. Dessert Berry tartlets from the bakery.
