Grilled Avocado and Pesto Salad

Ingredients

  • 10 tomatoes, quartered
  • 4 avocados, peeled, halved, and pitted
  • Extra-virgin olive oil
  • 1 red onion, sliced
  • 1/2 lemon
  • 1 cup pesto sauce
  • 1/2 cup pine nuts

Grilled Avocado and Pesto Salad

Time: 15 minutes prep, 10 minutes cook
Servings: 8
 

Directions

  1. Place avocados halves in a bowl and lightly coat with olive oil.
  2. Grill avocado halves face down for 45 seconds over medium heat.
  3. Remove and arrange on a tray with the quartered tomatoes. Drizzle with olive oil again.
  4. In a separate bowl, cover the red onion slices with juice from the lemon and olive oil.
  5. Place onions on top of the avocados, in the pit holes and then coat with the lemon/olive oil mix.
  6. Top with pesto sauce and sprinkle pine nuts on top.

    What an inventive way to prepare an advacado, I never would have thought to grill one I will be trying this recipe soon at a backyard BBQ.

      It is sure unique. I'm very familiar with avocado as dessert with milk and ice, but not grilled. Interesting.
