Ingredients

  • 6 x - 8 c. salad greens, Bibb lettuce, baby spinach, baby romaine or possibly radicchio (combinations work well)
  • 1 x and 1/2 c. oranges, peeled, seeded and minced
  • 1/4 c. black olives, sliced
  • 1/4 c. Feta cheese, crumbled Dressing
  • 1/4 c. fresh orange juice
  • 1/2 tsp dry mustard
  • 1 Tbsp. extra virgin olive oil
  • 1/4 c. red wine vinegar
  • 1 x garlic clove, chopped Salt and pepper to taste

Directions

  1. Combine salad ingredients and toss. Combine dressing ingredients and shake well. Pour over salad and toss just before serving.
  2. Chefs Notes: Feta cheese is low in fat and black olives contain the "good" type of fat.
