Ingredients
- 1/4 c. Raisins
- 1/4 c. Rum
- 4 whl apples, (Golden brown Delicious)
- 4 x Amaretti, cookies crumbled
- 1/3 c. Pine nuts
- 1/3 c. Walnuts, shelled,minced
- 1/2 Tbsp. Sugar
- 1/2 tsp Vanilla extract
- 5 ounce Bittersweet chocolate, minced Confectioner's sugar

Golden Stuffed Apples Mele Ripiene

Directions
- Soak the raisins in the rum for 30 min; drain. Cut the tops off the apples, reserve them to use as lids, and carve out half of the pulp; chop the pulp and combine it with the amaretti, pine nuts, walnuts, sugar, vanilla, and raisins.
- Fill the apples with the mix, cover each with a "lid", and steam for 6-8 min over boiling water.
- Heat the chocolate with 1/2 c. of water in a double boiler. Serve with the
- "lids" on a pool of chocolate sauce, dusted with confectioner's sugar.
