Ingredients

  • 1/4 c. Raisins
  • 1/4 c. Rum
  • 4 whl apples, (Golden brown Delicious)
  • 4 x Amaretti, cookies crumbled
  • 1/3 c. Pine nuts
  • 1/3 c. Walnuts, shelled,minced
  • 1/2 Tbsp. Sugar
  • 1/2 tsp Vanilla extract
  • 5 ounce Bittersweet chocolate, minced Confectioner's sugar

Directions

  1. Soak the raisins in the rum for 30 min; drain. Cut the tops off the apples, reserve them to use as lids, and carve out half of the pulp; chop the pulp and combine it with the amaretti, pine nuts, walnuts, sugar, vanilla, and raisins.
  2. Fill the apples with the mix, cover each with a "lid", and steam for 6-8 min over boiling water.
