Ingredients

  • 4 Tbsp. butter
  • 1/2 tsp lemon essence
  • 2 c. sugar
  • 4 c. flour
  • 2 x Large eggs
  • 2 Tbsp. grnd ginger
  • 2 Tbsp. lowfat milk
  • 1 tsp cream of tartar
  • 4 Tbsp. treacle
  • 2 tsp bicarbonate of soda

Directions

  1. Cream butter and sugar till thick and pale. Gradually add in the beaten egg. Continue to beat till thick.
  2. Combine lowfat milk, treacle, bicarbonate of soda, and lemon essence.
  3. Add in to the butter mix. Sift in flour, ginger and cream of tartar. Mix to lightly to create a smooth dough. Roll into walnut sized balls.
  4. Arrange proportionately spaced on a lightly greased baking tray. Bake 350 F 20 min.
