Ingredients

  • 1 x 200 gram pac French feta cheese, crumbled
  • 50 gm Ready to eat dry apricots, diced (2oz)
  • 25 gm Pine kernels, toasted (1oz)
  • 4 Tbsp. Greek natural yogurt
  • 1 med Size egg, beaten
  • 1 Tbsp. Freshly minced parsley Salt and freshly grnd black pepper
  • 1 x 225 gram pac unsmoked prime gammon steaks

Directions

  1. Place the feta cheese into a small mixing bowl and beat in the remaining topping ingredients, adding seasoning.
  2. Snip on the diagonal at regular intervals with a pair of scissors the fat along the edge of the meat. This prevents the steak from curling on cooking.
  3. Grill the gammon steaks following instructions on the pack. Top each steak with the cheese mix making sure it goes right to the edges and place under a moderate grill till cooked through, bubbling and golden.
  4. Notes Serve with couscous or possibly rice and a dressed tomato salad.
  5. NOTES : A rich cheesy topping with apricots and pine kernels to compliment the gammon steaks.
