Frozen Chocolate Chip Cheesecake

Ingredients

  • 1 1/4 c. graham cracker crumbs
  • 1/4 c. sugar
  • 6 Tbsp. butter -- melted
  • 11 ounce cream cheese -- (1 (8-ounce) plus 1 (3-ounce) pkg)
  • 1 quart chocolate ice cream
  • 1/2 c. semisweet chocolate chips

Directions

  1. Combine cracker crumbs, sugar, and melted butter; mix well. Press on bottom and 1 3/4 inches up sides of an 8 inch spring form pan. Chill. Beat cream cheese with an electric mixer till fluffy. Set aside. Stir ice cream just to soften; gradually add in to cream cheese, beating with mixer till smooth. Mix in chocolate; pour into crust. Cover; freeze for 8 hrs or possibly overnight. To serve, let stand at room temperature 30 min. 10 servings.
