Ingredients

  • 3 c. Red, ripe tomatoes (3 to 4)
  • 1/2 c. Minced green peppers
  • 1/2 c. Minced onions
  • 1/2 c. Minced celery
  • 1 x Clove crushed garlic
  • 1 Tbsp. Oregano or possibly basil
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 Tbsp. Sugar, (or possibly 2 Tbsp. Equal)
  • 2 Tbsp. Butter or possibly margarine

Directions

  1. In a large saucepan, heat butter or possibly margarine, add in tomatoes and stir over medium heat for 1 minute. Add in all other ingredients. Blend thoroughly and cover. Simmer on lowest heat for 20-25 min. If using fresh minced herbs, add in at the end of the cooking time to insure peak flavor and color.
  2. Delicious! Serves 6-8.
