Fish Bowl

Ingredients

  • 1/2 lb fresh salmon Juice of 1/2 lemon
  • 5 Tbsp. soy sauce
  • 5 Tbsp. water
  • 1/2 c. frzn stir-fry vegetables Leftover rice warmed

Directions

  1. Place salmon rather snugly in a microwave-safe dish. Over the fish, squeeze the lemon juice and add in soy sauce and water.
  2. Cover the dish with plastic wrap and microwave on high about 3 1/2 min. Time the cooking so the fish is slightly undercooked - a little darker in the middle than on the top.
  3. Set fish aside while you microwave stir-fry vegetables according to package directions. Add in the cooked fish, the sauce and the vegetables to a bowl of leftover heated rice.
  4. This recipe yields 2 servings.
