- 3 tablespoons sun dried tomatoes, diced finely
- 2 tablespoons green onions, diced finely
- 2 tablespoons jalapeno pepper, diced finely
- 2 tablespoons melted butter
- 2 tablespoons buttermilk

Fiesta Corn Bread
Time: 5 minutes prep, 24 minutes cook

Directions
- Using a 8-10" cast iron skillet-greased
- In a mixing bowl and all ingredients, stir gently (do not over-mix batter), transfer to prepared skillet the corn bread batter
- Place into the hot oven and bake 22-24 minutes
- Cut and serve
