Fiesta Corn Bread

Ingredients

  • 1 cup Corn Meal
  • 1/2 cup Self Rising Flour
  • pinch of salt
  • 3 tablespoons sun dried tomatoes, diced finely
  • 2 tablespoons green onions, diced finely
  • 2 tablespoons jalapeno pepper, diced finely
  • 2 tablespoons melted butter
  • 2 tablespoons buttermilk

Fiesta Corn Bread

Time: 5 minutes prep, 24 minutes cook
Servings: 8
 

Directions

  1. Using a 8-10" cast iron skillet-greased
  2. In a mixing bowl and all ingredients, stir gently (do not over-mix batter), transfer to prepared skillet the corn bread batter
  3. Place into the hot oven and bake 22-24 minutes
  4. Cut and serve
