Ingredients

  • 1/2 c. whole wheat flour
  • 1/3 c. all-purpose flour
  • 1 Tbsp. brown sugar
  • 1/2 tsp salt
  • 1/4 tsp baking pwdr
  • 1/8 tsp baking soda
  • 2 x beaten Large eggs
  • 2 c. buttermilk
  • 1 Tbsp. veg. oil

Directions

  1. Stir together first 6 ingredients. Combine the Large eggs, buttermilk , and the 1 Tbsp. of veg. oil; add in all at once to the flour mix, stirring till smooth.
  2. Pour 2 Tbsp. of the batter into a warm, lightly greased 6-inch skillet; lift and quickly rotate pan so which batter covers bottom. Return skillet to medium heat. Cook about 1 minute or possibly till light brown on bottom. Invert bread onto paper toweling. If necessary, loosen with a small spatula. Repeat with remaining batter, 2 Tbsp. at a time. Roll up jell-roll style and serve hot.
