Easy Tropical Carrot Cake with Coconut Cream Cheese Frosting

Ingredients

  • 1 box carrot cake mix (I like Duncan Hines)
  • 1 cup pineapple juice
  • 1 small can crushed pineapple
  • 3 eggs, beaten
  • 1/3 cup toasted walnuts
  • 1/2 cup melted butter
  • 1/2 cup toasted coconut flakes
  • Frosting:
  • 1 1/2 sticks soft butter
  • 3 cups powdered sugar
  • tsp. vanilla
  • 16 oz. cream cheese, room temp
  • 2 cups toasted coconut flakes
  • optional: toasted walnuts
  • or
  • 1 can cream cheese frosting
  • 2 cups toasted coconut flakes

Easy Tropical Carrot Cake with Coconut Cream Cheese Frosting

Time: 15 minutes prep, 30 minutes cook
Servings: 12
 

Directions

  1. Heat oven to 350 F.
  2. Grease and flour pan or pans of choice.
  3. Beat eggs and add other ingredients. Mix well.
  4. Add batter to pan (s).
  5. Bake according to box directions.
  6. Frosting:
  7. Using a hand mixer, combine vanilla, butter, cream cheese, then add sugar.
  8. Beat until smooth.
  9. Frost cake, then sprinkle on coconut

    Hey Myra! This cake looks scrumptious! I really like the idea of cutting corners and saving time sometimes especially if it doesn't take away from the overall effect of the recipe. Great Job! I wish I had a piece right now! Alas, I digress.

      This sounds yummy! I'm definitely going to try this...and I may have to add some golden raisins to the mix, because I LOVE raisins in my carrot cake. Thanks for the idea of coconut in the mix. Sounds amazing.
