  • 1 sponge cake
  • 1/2 pt. heavy cream, whipped with 1/4 c. powdered sugar & 1 teaspoon vanilla
  • 1 pound ricotta cheese, lightly whipped
  • 1 c. each minced cherries, minced nuts, chocolate chips


  1. Split sponge cake in half, making two layers. Fold whipped cream into whipped ricotta. Add in cherries, nuts and chocolate, mix with spoon and frost layers like cake. Garnish with chocolate curls (optional). Chill.
