Easy Black Bean Soup

Use canned black beans for this easy prep soup.

Ingredients

  • 1 1/2 tbs. smoked cumin
  • 3 tbs. olive oil
  • 1 large onion, chopped
  • 2 large carrots, chopped
  • 2 ribs celery, chopped
  • 4 cloves garlic, chopped
  • 3 cans black beans, undrained
  • 2 bay leaves
  • 1 smoked ham hock
  • 2-3 cups chicken stock
  • salt and pepper to taste
  • Tabasco to taste
  • Garnish:
  • 2 tbs. fresh lime juice
  • sour cream
  • cilantro

Directions

  1. Smoke the cumin until fragrant.
  2. Saute veggies and garlic until golden brown.
  3. Add all ingredients in a soup pot, add 2 cups of the broth.
  4. Simmer 30 minutes.
  5. Remove ham hock and bay leaf.
  6. Let cool, place in food processor in batches. Puree.
  7. Use more broth to attain desired consistency.
  8. Reheat.
  9. Stir in lime juice.
  10. Top with dollops of sour cream and chopped cilantro.
