Easy Baked Rice Pudding

This is how I use up my leftover rice, of course I have been known to make too much rice so I will have to make this recipe to use it up.

Ingredients

  • 1 cup cooked rice
  • 2 1/2 cups milk
  • 3 eggs, lightly beaten
  • 3/4 cup sugar
  • 3/4 cup raisins
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Directions

  1. Preheat oven to 325 degrees
  2. Lightly grease a 9 inch glass baking dish
  3. In a large bowl, stir together first 7 ingredients
  4. Spoon into prepared baking dish
  5. Place baking dish in a large pan; pour about 1 inch of water into baking dish
  6. Bake for 1 1/2 hours, or until browned and set
  7. Combine cinnamon and nutmeg and sprinkle over top of pudding
  8. Cool slightly and cut into squares
