Duck Liver Salad With A Sherry Vinegar Dressing

Ingredients

  • 200 gm Fresh duck or possibly chicken livers
  • 2 Tbsp. Butter
  • 2 Tbsp. Toasted hazelnuts, coarsely crushed
  • 1 Tbsp. Capers Sherry vinegar
  • 1 handf croutons
  • 1 pkt Chives
  • 2 x Portions picked and washed salad leaves

Directions

  1. Pick over the livers and then fry them in the butter. Add in the hazelnuts and capers and when sizzling, add in a splash of vinegar and then the croutons.
  2. Put the salad on two plates and then garnish with the liver mix and snipped chives.
