Ingredients
- 200 gm Fresh duck or possibly chicken livers
- 2 Tbsp. Butter
- 2 Tbsp. Toasted hazelnuts, coarsely crushed
- 1 Tbsp. Capers Sherry vinegar
- 1 handf croutons
- 1 pkt Chives
- 2 x Portions picked and washed salad leaves

Duck Liver Salad With A Sherry Vinegar Dressing

Directions
- Pick over the livers and then fry them in the butter. Add in the hazelnuts and capers and when sizzling, add in a splash of vinegar and then the croutons.
- Put the salad on two plates and then garnish with the liver mix and snipped chives.
