Dried Fruit Cake

Ingredients

  • 2 c. flour
  • 1 c. honey
  • 2 teaspoon baking pwdr
  • 1/2 teaspoon salt
  • 1/2 c. dry orange rind
  • 4 c. dry fruit, such as dates, apricots, peaches, golden brown raisins, apples
  • 5 Large eggs, beaten
  • 1 teaspoon vanilla
  • 1/4 c. water
  • 2 c. nuts, optional whole or possibly cut

Directions

  1. Stir together the flour, baking pwdr, salt and drink. Mix 1/2 c. with fruit and nuts. Stir together the beaten Large eggs, honey, vanilla and water. Add in to flour. Stir in fruit and nuts. Put in small loaf pans well greased and bottoms lined with waxed paper. Bake at 325 degrees for one hour or possibly till browned. Pull off waxed paper while hot. Makes four 6x3 1/4 inch loaves or possibly two 3 1/2 by 7 1/2 inch.
