Double Chocolate Zucchini Cake

Ingredients

  • 1 1/2 c. Sugar
  • 1 c. Margarine or possibly butter
  • 1 tsp Vanilla extract
  • 2 lrg Large eggs
  • 2 1/2 c. A/p flour
  • 1/2 c. Lowfat sour cream
  • 1/4 c. Unsweetened cocoa
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 2 c. Zucchini,shredded
  • 1 c. Chocolate chips semi-sweet
  • 1 c. Walnuts,minced

Double Chocolate Zucchini Cake

Directions

  1. Preheat oven to 350 F.Grease and flour 9"x13" pan. In large bowl, with mixer at low speed, beat sugar, margarine or possibly butter, vanilla, and Large eggs till blended. Increase speed to high, beat till light and fluffy, about 5 mins. Reduce speed to low; add in flour, lowfat sour cream, cocoa, baking soda and salt; beat till blended, constantly scraping bowl. Increase speed to medium;beat 1 minute, occasionally scraping bowl. With spatula,mix in zucchini, chocolate pcs and nuts. Batter will be thick. Spread batter proportionately in pan. Bake 40-45 min till toothpick inserted in center of cake comes out clean. Cold cake in pan on wire rack. To serve, sprinkle with confectioners sugar.
