Curried yellow cling peaches

This dish is very delectable and can be served at your barbeque, goes well with any type of meat, like steak, pork or lamb chops or duck,turkey and chiken, or added to create a marinade which really tenderize the meat. Can be stored in a cool place, the longer the better the taste will improve

Ingredients

  • 2 kg ripe yellow cling peaches, peeled and cut into snippets
  • 3 tsp salt
  • 1/4 cup white sugar
  • 2 cups white vinegar
  • 3 tp medium strong curry powder1 tsp tumeric
  • 1 tsp crushed dried chillies
  • 3 bayleaves
  • 1 red hot chillie, chopped
  • 1/2 tsp fine cumin
  • 1/2 tsp pimento seeds
  • 1 tsp grated ginger root
  • 1 tsp corriander toasted corriander seeds
  • 6 whole cloves
  • 4 onions, thinly sliced
  • 1 tbsp olive oil

Directions

  1. Place the peaches in a large enough nowl. Sprinkle with the first amount of salt and sugar, allow to stand overnight
  2. Drain the liqid which had formed into a large saucepan
  3. Add all the condiments and onions
  4. When the onions are translucend, add the fruit and simmer for about 10 minutes, the fruit will remain a bright colour
  5. Bottle in sterilisized bottles while warm
